In a nutshell, the whole "wife vs. parents" thing could have been avoided with one easy step. In the state of UT, you can assign an agent to handle your funeral arrangements. This supersedes other relationships including the executor of the will, which is the leg his wife (ex-wife, whatever) is standing on.
